I think the key to a successful Whole 30 is simplicity. I’ve mentioned before that you should eat the same thing for breakfast for a week then change it up the following week. This may be boring – but it saves you a lot of time in the mornings.
Similarly, I like to make a few big meals and portion them out for the next few days. Eating the same thing four times in a row can get pretty sad but trying to cook something amazing every night is just exhausting.
This is why making a massive pan of Italian meatballs on Sunday night is an excellent idea. This recipe is adapted from Well Fed 2 and makes enough to see you through to Tuesday night. Winning.
Now, I’m not really one for measurements so please excuse my approximations – I’ve used measurements where necessary but with the veg just throw whatever suits your taste. Sunday night is a good time to clear out the fridge so I threw in loads of mushrooms and spinach to use them up.
Whole30 Paleo Italian Meatballs
The Meatballs.
2 Tablespoons warm water
1/2 teaspoon cream of tartar
1/4 teaspoon baking soda
500g beef mince
2 cloves garlic, minced
1 tablespoon tomato paste
1 tablespoon balsamic vinegar
handful parsley
handful basil
salt and pepper
Mix in a cup the cream of tartar and baking soda with the warm water and set aside. Mix the rest of the ingredients together in a big bowl and then add the cream of tartar/baking soda mixture. Roll into small, even sized balls (I made 30) and put in the fridge.
The Meatball Sauce
Get a large frying pan. Brown an onion and garlic in some oil. Add vegetables (I used 2 courgettes, 1 carrot, a heap of mushrooms, 2 stalks of celery). Once they have gone soft add 2x tins diced tomatoes and a tablespoon of tomato paste. Leave to simmer.
Heat oil in a frying pan. Add all the meatballs and leave to brown. After a few minutes turn them over – be very gentle. Once they have browned all over add them to the tomato sauce.
Leave it to simmer away for a bit then add another handful of basil, a few handfuls of spinach. And really whatever else you want. I’m not a cook. I can’t tell you what to do when I don’t even know what I’m doing myself.
Serve. With wine.
